Passover Bagel Recipe

Ingredients
  • 1 cn Peach slices, 8 oz. drained
  • 1 ts Vanilla
  • 1/4 ts Almond extract
  • 2 tb Sugar
  • Confectioners sugar
  • 1 Banana, sliced
  • FILLING:
  • 6 lg Eggs
  • 1 1/2 c Matzoh meal
  • 1 c Sliced strawberries
  • 1 1/2 c Heavy cream
  • 1/2 c Butter or margarine

Directions
  • Step #1 In medium saucepan, melt butter in 1 1/2 c water with 1/2 tsp salt until mixture boils.
  • Step #2 as soon as possible add all matzoh meal with a wooden spoon beating dough until smooth.
  • Step #3 Beat in eggs, one at a time, until mixed into dough.
  • Step #4 preheat your trusty oven to 400F degrees.
  • Step #5 Line large baking with aluminum foil; grease foil.
  • Step #6 With blunt point mark 7 inch circle in center of foil.
  • Step #7 Place dough in pastry bag fitted with star tip.
  • Step #8 Pipe or spoon dough around circle so that mounds touch.
  • Step #9 Bake 50 mins or until firm & golden brown.
  • Step #10 Let cool on foil 10 mins.
  • Step #11 With serrated knife cut pastry ring in half horizontally; remove soft center.
  • Step #12 Turn off oven, leave ring in oven 30 mins.
  • Step #13 Cool completely on wire rack.
  • Step #14 Meanwhile make filling.
  • Step #15 In chilled small bowl at high speed beat heavy cream & sugar with vanilla and almond extract to stiff peaks.
  • Step #16 Spoon mixture into bottom half of pastry ring.
  • Step #17 top this with remaining half of pastry.
  • Step #18 Fill center of ring with fruit.
  • Step #19 Sprinkle top with confectioners sugar.
