Passover Brownies Recipe

Ingredients
  • 1 c Sugar
  • 3 lb Fresh beets OR
  • 1 1/4 c Honey
  • 1 1/2 Lemons
  • 2 cn Shoestring beets
  • 1 ts Ginger
  • 4 oz Blanched,shredded almonds

Directions
  • Step #1 Boil, peel & grate fresh beets on large grater, or use shoestring beets.
  • Step #2 Bring sugar & honey to a rolling boil; add beets, lemon juice & rind.
  • Step #3 Cook 30 min.
  • Step #4 Add ginger & cook this until thick, about 30 min.
  • Step #5 longer.
  • Step #6 Add almonds, cook for 5 min.
  • Step #7 stirring often.
