Passover Chocolate Mandrin Torte Recipe

Ingredients
  • 1 1/2 c Brown sugar, firmly packed
  • 1/2 c White sugar
  • 2 c Chocolate chips
  • 1/2 c Matzoh cake meal
  • 1/4 ts Salt
  • Or 1 ts vanilla
  • 1/4 c Matzoh meal
  • 2 Eggs
  • 1 c Potato starch
  • 2 tb Passover vanilla sugar
  • 1 c Unsalted butter or margarine

Directions
  • Step #1 : Cream both sugars together with vanilla sugar or vanilla, butter.
  • Step #2 mix in the eggs.
  • Step #3 stir in the the salt, matzoh meal, cake meal potato starch & chocolate chips.
  • Step #4 Chill the dough for over an hror over night.
  • Step #5 (It freezes well) : preheat your trusty oven to 350 F.
  • Step #6 Line a couple of baking sheets with parchment paper.
  • Step #7 Scoop tsps of dough onto the sheets, leaving room for them to spread.
  • Step #8 : Bake in the preheated oven about 12 mins.
  • Step #9 Let the cookies sit on the parchment paper for 10-15 mins, until just cool.
  • Step #10 Using a metal spatula transfer them to racks to finish cooling.
