Passover Citrus Sponge Roll Recipe

Ingredients
  • 2 tb Currants
  • 1/3 c Sugar
  • 2 tb Almonds,sliced
  • 1/4 c Matzoh meal
  • 3 Matzoh crackers
  • 3 Eggs,separated
  • 2 tb Apricots,dried,sliced
  • 1 Lemon rind,grated
  • 1 tb Lemon juice

Directions
  • Step #1 1.
  • Step #2 Soak matzoh in water to cover 3 to 5 mins.
  • Step #3 Squeeze dry.
  • Step #4 Mix matzoh, yolks, apricots, sugar, matzoh meal, currants, almonds, lemon rind & juice in bowl.
  • Step #5 Beat egg whites in bowl until stiff, not dry.
  • Step #6 Fold into matzoh mixture.
  • Step #7 2.
  • Step #8 Heat 1/4" vegetable oil in electric wok or deep fryer to 375'F.
  • Step #9 Drop mixture by measuring tbsps into oil; cook carefully 2-4 mins, turning when first side is golden.
  • Step #10 Drain on paper toweling.
  • Step #11 Serve at about room temp.
  • Step #12 Or crisp: Arrange in single layer on paper-toweling-lined baking sheets & bake in 350'F oven 5 mins.
