Passover Strawberry-kiwi Sponge-cake Roll Recipe

Ingredients
  • 5/8 c Cake flour
  • 1/2 Lemon-juice & rind
  • 9 Eggs, separated
  • 1/2 Orange-juice & rind
  • 1 3/4 c Sugar
  • 3/8 c Potato starch
  • 1/4 c Cold water

Directions
  • Step #1 Separate eggs putting whites in mixing bowl & yolks in cold water.
  • Step #2 Beat whites by hand or electric mixer until stiff but not dry.
  • Step #3 slowly add sugar.
  • Step #4 Add yolks & water mixture & beat well.
  • Step #5 Add juices & rinds & beat well.
  • Step #6 Add cake flour & starch that have been mixed with very low mixer or by hand.
  • Step #7 Be sure that the flour mixture is thoroughly mixed.
  • Step #8 Put in Angel Food cake pan & bake about 45 min.
  • Step #9 or until done in 350 F.
  • Step #10 oven.
  • Step #11 (This recipe is "cook-friendly", easy & quick.
  • Step #12 You can improvise by adding nuts, cinnamon-sugar, or other things but the basic recipe is moist and tasty & wonderful especially as the base for fruits.
