Pasta With Vodka Recipe

Ingredients
  • 2 1/2 c Flour, sifted
  • 3 ea Eggs

Directions
  • Step #1 Sift flour into a mound on a warm (room-temperature) surface.
  • Step #2 Make a fist-size crater in the mound.
  • Step #3 Crack the eggs into this crater.
  • Step #4 Using a fork, beat the eggs until the yokes are broken & mixed.
  • Step #5 Continue beating, slowly adding flour from the sides of the crater until the mixture is not runny.
  • Step #6 Begin mixing the entire with your bare hands, until the eggs are completely mixed in with the flour.
  • Step #7 If the ball is still sticky, add a small amount of flour.
  • Step #8 Wrap the ball tightly in plastic wrap & clean up your work area.
  • Step #9 Unwrap the ball & knead the dough: Push down, away from you with the heel of your hands.
  • Step #10 Grasp the point of dough furthest from your body & fold down towards you.
  • Step #11 Rotate the dough 90 degrees and repeat.
  • Step #12 Continue kneading until the dough is smooth (about 10-15 mins).
  • Step #13 Wrap the dough tightly & set aside for 20 mins.
  • Step #14 At this point, the dough is finished.
  • Step #15 You may either run it through a pasta press, or use a rolling pin to flatten & knife to cut the pasta.
