Pasta & Garbanzo Beans With Roasted Vegetable Recipe

Ingredients
  • 2 Garlic cloves, sliced
  • 2 cn 15-16 oz, garbanzo beans, rinsed & drained
  • 2 tb Olive oil
  • 4 oz Fresh fettucine, cut into 3/8 inch pieces
  • 2 Fresh rosemary sprigs
  • 1 c Canned crushed tomatoes with added puree
  • 4 c Vegetable broth or low-salt chicken broth

Directions
  • Step #1 Heat oil in heavy large saucepan over med-heat/flame.
  • Step #2 Add tomatoes, garlic & rosemary.
  • Step #3 Simmer 5 mins.
  • Step #4 Add 3 c broth; stir this to mix.
  • Step #5 Puree remaining 1 c broth & 1 c of the garbanzo beans.
  • Step #6 Add to saucepan.
  • Step #7 add in the remaining whole garbanzo beans.
  • Step #8 Bring to a boil.
  • Step #9 Reduce heat & let simmer 10 mins.
  • Step #10 Add the pasta & let simmer until tender, about 10 mins.
  • Step #11 Spice up this with salt & pepper.
  • Step #12 Serve, passing freshly grated Parmesan cheese separately.
