Pasta & Kidney Bean Soup Recipe

Ingredients
  • 1 c sliced fresh basil
  • Or red wine vinegar
  • 1 c sliced drained seeded canned
  • 5 Red bell peppers, sliced
  • Rinsed & drained
  • x parmesan cheese
  • 2 md Red onions, sliced
  • 4 lg Garlic cloves, minced
  • On top
  • 1/4 c Plus 3 Tbsp balsamic vinegar
  • 1 1/2 15 oz cans garbonzo beans,
  • 1 1/2 lb Fusilli or rotini pasta
  • Italian plum tomatoes

Directions
  • Step #1 mix garbonzo beans, onions & vinegar in a bowl.
  • Step #2 Set aside.
  • Step #3 Preheat broiler.
  • Step #4 mix bell peppers, tomatoes, 3/4 c basil and garlic in another bowl.
  • Step #5 Spread mixture evenly over heavy large baking sheet (spread with pam type substance).
  • Step #6 Broil until peppers soften slightly, stirring every once in awhile ~10min.
  • Step #7 Add to garbonzo beans.
  • Step #8 Meanwhile, add to bowl of all the other stuff, when done, cook pasta, toss well.
  • Step #9 Sprinkly with remaining 1/4c basil & cheese if desired.
