Pasta & Oregano Recipe

Ingredients
  • 1/4 c Olives, black -- slivered
  • 1/4 c -- water
  • 1/4 lb Pasta
  • sliced parsley for garnish
  • 3 Parsley sprigs -- sliced
  • 3 Garlic cloves -- slivered
  • Salt & pepper to taste
  • 2 c Navy beans -- cooked
  • 2 c Tomato sauce -- low sodium
  • 2 c Broccoli florets
  • 2 ts Oregano
  • 3 Tomatoes, plum -- sliced
  • 2 ts Basil
  • 2 tb Olive oil

Directions
  • Step #1 Cook pasta acording to package directions.
  • Step #2 Drain well.
  • Step #3 You should have about six c of cooked pasta.
  • Step #4 In a large pot, heat oil & saute garlic until lightly browned.
  • Step #5 Stir in tomatoes.
  • Step #6 Add tomato sauce, water, parsley, oregano & basil.
  • Step #7 Cook, uncovered, over med-heat/flame, mashing tomatoes with a spoon.
  • Step #8 When sauce thickens (about 8 mins), add broccoli.
  • Step #9 Simmer, until broccoli is tender but still crunchy, covered, about 5 more mins.
  • Step #10 Add beans & olives, & mix well.
  • Step #11 Simmer, covered, until heated through.
  • Step #12 stir in the pasta.
  • Step #13 Add salt & pepper,Sprinkle top withparsley and serve.
  • Step #14 Serves 5.
  • Step #15 Per serving: 488 cal; 21 g prot; 9 g fat; 85 g carb; 0 chol; 306 mg sod.
