Pasta - Basic Recipe For Homemade Recipe

Ingredients
  • Salt & pepper to taste
  • 1 ts Dried tarragon
  • 1 1/2 c Low-sodium chicken broth OR- water
  • 2 tb Grated Parmesan cheese
  • 1 sm Onion; peeled & sliced
  • 10 oz -Frozen broccoli, thawed, drained & sliced
  • 4 oz Ground turkey
  • 16 oz Canned tomatoes liquid reserved, sliced fine
  • 1 bn Fresh broccoli; sliced; OR
  • 1 ts Dried sage
  • 2 tb Plain bread crumbs
  • 15 1/2 oz Canned white beans rinsed & drained
  • 8 oz Rotini, Twists or Spirals uncooked

Directions
  • Step #1 Prepare pasta according to package directions, undercooking by three mins; drain.
  • Step #2 preheat your trusty oven to 350 degrees F.
  • Step #3 Crumble turkey into a large skillet and place over med-heat/flame.
  • Step #4 Cook, stirring every once in awhile, until turkey is cooked through, about 4 mins.
  • Step #5 Pour off all but 1 tbsp of the drippings in the pan.
  • Step #6 Add onion, broccoli, sage & tarragon to the pan.
  • Step #7 cook this until vegetables are soft, about 4 mins.
  • Step #8 Add tomatoes & heat to boiling, stirring every once in awhile.
  • Step #9 Boil 3 mins.
  • Step #10 Remove skillet from heat & add chicken broth or water, beans & salt and pepper to taste.
  • Step #11 Stir well.
  • Step #12 In a large bowl, mix broccoli & turkey mixture with cooked pasta.
  • Step #13 Toss well.
  • Step #14 Transfer mixture into a 1 1/2-quart baking dish.
  • Step #15 In a small bowl, mix bread crumbs & Parmesan cheese & Sprinkle top over casserole.
  • Step #16 bake this until heated through in the center, about 20 mins.
  • Step #17 At this point, you may halve the mixture & make two casseroles using two smaller pans.
  • Step #18 Bake one for now & freeze the other one for later.
  • Step #19 Each serving provides: 374 Calories; 26.
  • Step #20 1 g Protein; 61.
  • Step #21 5 g Carbohydrates; 3.
  • Step #22 2 g Fat; 27.
  • Step #23 6 mg Cholesterol; 545 mg Sodium.
