Step #1 PREPARATION: Make the Egg pasta dough; roll as thin as possible and cut into 1/8- to 1/4-inch wide strips.
Step #2 Cut the bacon into thin strips widthwise.
Step #3 Chop the onion.
Step #4 Grate the Parmesan cheese.
Step #5 NOTE: Recipe can be made to this point several hrs in advance.
Step #6 COOKING AND SERVING: Cook the bacon in frying pan over med-heat/flame until golden brown, about 10 mins.
Step #7 Remove bacon & drain on paper towels.
Step #8 Reduce heat to low & cook onion in bacon fat until soft, about 5 mins.
Step #9 Remove pan from heat & set aside.
Step #10 Beat eggs together in a small bowl.
Step #11 Cook pasta in a large pot of boiling, salted water until tender, about 3 mins for fresh pasta.
Step #12 Drain the pasta & return to pot.
Step #13 over low heat/flame, eggs, toss pasta with the bacon, onion, and Parmesan cheese until pasta is well coated; heat until pasta is warmed through.
Step #14 Spice up to taste with salt & pepper.
Step #15 Serve as soon as possible.
