Chicken Andegetables Soup Recipe

Ingredients
  • 1/4 c uncooked long grain white rice
  • 1 (32 oz) package fat-free chicken broth
  • 1 tsp salt-free seasoning mix
  • 1/2 tsp salt
  • 1/2 lb baby carrots, sliced
  • 1/3 head cauliflower, sliced
  • 1 lb Brussels sprouts, trimmed & sliced
  • 1/2 tsp garlic powder
  • 6 chicken drumsticks
  • 1 bunch fresh dill weed
  • 1 whole onion, peeled
  • 1 lb fresh asparagus spears, trimmed & sliced

Directions
  • Step #1 Place the onion & chicken in a pot with enough cold water to cover.
  • Step #2 Spice up with salt, & bring to a boil.
  • Step #3 Cook 30 mins, or until the chicken meat is easily removed from the bone.
  • Step #4 Remove chicken from the pot, reserving water.
  • Step #5 Discard the onion.
  • Step #6 Pull all the meat from the bones, chop, & return to pot.
  • Step #7 Discard bones.
  • Step #8 Place the cauliflower, Brussels sprouts, baby carrots, & asparagus in the pot.
  • Step #9 Pour in the chicken broth.
  • Step #10 Spice up with garlic powder & salt-free seasoning mix.
  • Step #11 Bring to a boil, reduce heat to low, & let simmer 40 mins.
  • Step #12 Stir the rice into the pot.
  • Step #13 Continue cooking 20 mins, or until rice is tender.
  • Step #14 Mix dill into the soup 5 mins before serving.
