Pasta With Anchovy & Clam Sauce *** (btvc62 Recipe

Ingredients
  • 3 tb Butter
  • 1/4 c Parsley; finely sliced pre
  • 1/2 c Dry white wine
  • 3 c Garlic; minced
  • 1/2 ts Rosemary; sliced
  • 3 Anchovies; salted whole 2 Cherrystone clams; in the s
  • 1 lb Linguine ; other pasta, coo
  • Freshly ground pepper to tas
  • 1/4 c Olive oil
  • 2 Shallots; finely sliced

Directions
  • Step #1 If salted whole anchovies are used, wash them in cold running water to remove most of the external salt & any tiny scales that may be present.
  • Step #2 Use the fingers to pull the fillets from the bone.
  • Step #3 Discard the bones.
  • Step #4 Set the fillets aside.
  • Step #5 Open the clams or have them opened and reserve both the clams & 1 c of clam juice.
  • Step #6 Finely chop the clams & set aside.
  • Step #7 Heat the oil & butter in a skillet.
  • Step #8 Add the garlic & shallots & cook this until light brown.
  • Step #9 Add the anchovies & stir until they dissolve.
  • Step #10 Add the parsley, rosemary, reserved clam juice & white wine & bring to a boil.
  • Step #11 Add pepper & a tiny bit of salt & let simmer 15 mins.
  • Step #12 Add the sliced clams & cook 5 mins.
  • Step #13 Serve piping hot over the freshly cooked pasta.
  • Step #14 Serve red pepper flakes on the side, if desired, but no cheese.
