Pasta With Goat Cheese & Asparagus Recipe

Ingredients
  • 1/2 c Olive oil
  • 6 ea Garlic cloves
  • Salt & pepper
  • 1 lb Spaghetti

Directions
  • Step #1 VERSION 1: With raw garlic: mix the the garlic with the olive oil.
  • Step #2 Cook the pasta until it is al dente , then drain & toss with the garlic & olive oil.
  • Step #3 Spice up well & serve as soon as possible.
  • Step #4 VERSION 2: With lightly toasted golden garlic: Heat the garlic in the olive oil until golden.
  • Step #5 remove this from the heat & set aside.
  • Step #6 Cook the pasta until al dente , then drain & toss with the garlic.
  • Step #7 Spice up & serve as soon as possible.
  • Step #8 VARIATIONS USING VERSION 2: Add a generous pinch of hot red pepper flakes as you heat the garlic.
  • Step #9 Toss with the cooked pasta & a handful or two of sliced fresh parsley.
  • Step #10 Prepare the basic recipe, adding parsley as above.
  • Step #11 Spice up this with lots of cayenne pepper & toss with the finely grated rind of 1 lime & the juice of 1 or 2 limes.
  • Step #12 Also good with lemon.
  • Step #13 Add several tspfuls of capers to the hot pepper variation.
  • Step #14 Add a small handful of torn basil leaves to the oil as you heat the garlic.
  • Step #15 Coarsely chop half a head or so of white cabbage & add to the pan along with the heating garlic & hot red pepper flakes.
  • Step #16 Saute until tender & slightly browned.
  • Step #17 Add more oil, garlic & red pepper if needed.
  • Step #18 Spice up & toss with pasta of your choice.
