Pasta With Roasted Eggplant & Tomato Sauce Recipe

Ingredients
  • 1/2 lb Pasta
  • 2 Garlic cloves; minced
  • 1 c Vegetable broth
  • 1 Onion; sliced
  • 6 Carrots; peeled, sliced
  • 1 tb Olive oil

Directions
  • Step #1 preheat your trusty oven to 350 degrees.
  • Step #2 mix carrots, onion, olive oil and garlic in a small bowl, then spread on a baking sheet.
  • Step #3 Bake for 45 mins, stirring twice, until golden & tender.
  • Step #4 Meanwhile, cook pasta according topackage directions; drain.
  • Step #5 Puree roasted vegetables with vegtable broth in food processor/blender or mixer.
  • Step #6 Toss with hot pasta.
  • Step #7 Serve as soon as possible.
  • Step #8 Serves 2.
