Pasta With Smoked Salmon Recipe

Ingredients
  • 3 oz Sundried tomatos reconstitut
  • Oil for sauteeing
  • sliced tomatos
  • 1/2 ts Pureed garlic
  • Parmesan cheese
  • 8 oz Angel hair pasta
  • Meat from 1/2 smoked chicken
  • Fresh ground pepper to taste
  • sliced chives
  • 3 tb Shallots or onions, minced
  • Salt to taste
  • 3 c Heavy cream

Directions
  • Step #1 Saute shallots briefly in hot oil, add garlic but do not cook.
  • Step #2 Add cream & pepper.
  • Step #3 Bring to boil, simmer until thick (about 1/2 original volume.
  • Step #4 Salt to taste.
  • Step #5 Strain if desired.
  • Step #6 While sauce thickens, clean meat from chicken, cut into large thin slices or tear into chunks.
  • Step #7 Reconsitute tomatos by dropping into boiling water for 1 min.
  • Step #8 Drain & julienne.
  • Step #9 Cook pasta in about 2 Qt.
  • Step #10 boiling water with salt & oil.
  • Step #11 cook this until al dente.
  • Step #12 Drain, rinse under hot water briefly.
  • Step #13 While pasta cooks, warm tomatos & chicken in cream sauce.
  • Step #14 Dilute if needed with milk or half-and- half.
  • Step #15 Place pasta on serving plate & spoon sauce over.
  • Step #16 top this with freshly grated cheese, sliced chives, sliced tomatos or whatever.
  • Step #17 Serves 6.
