Step #1 In a small saucepan, bring the cream to a boil & let simmer to reduce to one c.
Step #2 Break off the ends of the asparagus, cut the spears into pieces & cook in boiling salted water for about seven mins or until they are tender; drain.
Step #3 Cut the salmon into strips.
Step #4 Grate one tsp of lemon zest & squeeze one tsp of juice from the lemon.
Step #5 Cook the pasta in boiling water about 12 mins or till just done.
Step #6 Return to the hot pot & toss with the reduced cream, smoked salmon, lemon zest & juice, asparagus, & butter.
Step #7 Salt to taste and plenty of fresh ground black pepper.
Step #8 Serve as soon as possible.
Step #9 If using ricotta cheese & milk instead of the cream, do not reduce it but mix only the amount the recipe calls for & heat.
Step #10 Pur?e the ricotta in a mixer & thin with a little milk.
