Pasta With Smoked Salmon & Golden Caviar Recipe

Ingredients
  • 1 Lemon
  • 1 lb Asparagus
  • 6 oz Salmon, smoked
  • 3/4 lb Fettuccine
  • 1 1/2 c Cream, heavy
  • 2 T Butter
  • Salt & pepper

Directions
  • Step #1 In a small saucepan, bring the cream to a boil & let simmer to reduce to one c.
  • Step #2 Break off the ends of the asparagus, cut the spears into pieces & cook in boiling salted water for about seven mins or until they are tender; drain.
  • Step #3 Cut the salmon into strips.
  • Step #4 Grate one tsp of lemon zest & squeeze one tsp of juice from the lemon.
  • Step #5 Cook the pasta in boiling water about 12 mins or till just done.
  • Step #6 Return to the hot pot & toss with the reduced cream, smoked salmon, lemon zest & juice, asparagus, & butter.
  • Step #7 Salt to taste and plenty of fresh ground black pepper.
  • Step #8 Serve as soon as possible.
  • Step #9 If using ricotta cheese & milk instead of the cream, do not reduce it but mix only the amount the recipe calls for & heat.
  • Step #10 Pur?e the ricotta in a mixer & thin with a little milk.
