Pavalova/kiwi Recipe

Ingredients
  • 1/2 c Water
  • 4 Hard-cooked eggs
  • 1/4 c Snipped parsley
  • 1/8 ts Ground pepper
  • 4 Thin slices cooked ham
  • 1/4 c Finely sliced onion
  • 1 tb Water
  • 2 ts Cornstarch
  • 6 Medium carrots,cut/strips
  • 1/2 ts Instant beef bouillon
  • 1 tb Butter or margarine
  • 1 lb Veal round,arm,blade steak
  • 8 Small white onions
  • 1/2 ts Salt
  • 4 Serving mashed potatoes
  • 2 tb Butter or margarine
  • 1/2 c Dry white wine

Directions
  • Step #1 Cut bone & fat from steak; cut steak into 4 pieces.
  • Step #2 lb steak into 1/4 inch thick.
  • Step #3 Sprinkle top one side of steak with salt & pepper.
  • Step #4 Melt 1 tbsp butter.
  • Step #5 Cook & stir onion & parsley in butter over med-heat/flame until onion is tender, 4 to 5 mins.
  • Step #6  Spread equal amount of onion mixture over each piece of steak.
  • Step #7 Place a slice of ham & an egg on top of onion mixture.
  • Step #8 Roll up carefully, beginning at narrow end; tie string around middle & ends of each roll.
  • Step #9  Melt 2 tbsps butter in Dutch oven.
  • Step #10 Brown veal rolls in butter oven medium heat.
  • Step #11 Add carrots, wine, onions, bouillon & 1/2 c water.
  • Step #12 Cover & bake in 325' oven until meat is tender, about 1 hr.
  • Step #13 Remove veal rolls & vegetables from Dutch oven.
  • Step #14 Remove the strings; cut each roll in half.
  • Step #15 Keep warm while preparing gravy.
  • Step #16  Mix cornstarch & 2 tbsps water; stir in theto pan liquid.
  • Step #17 Heat to boiling, stirring constantly.
  • Step #18 Boil & stir until gravy thickens, 1 to 2 mins.
  • Step #19 For each serving, place 2 halves of each roll cut side up in a nest of mashed potatoes.
  • Step #20 Serve gravy in veal rolls.
