Peach & Blueberry Cobbler Recipe

Ingredients
  • 3 tb Sugar
  • 1 pt Blueberries, fresh; 1 lb
  • 1 c Flour; all purpose
  • 5 1/3 tb Butter;melted, 2 2/3 oz
  • 1 ts Baking powder
  • 1 ts Cinnamon
  • 2 lb Peaches, fresh; 6-7 ripe freestone
  • 3/4 c Sugar; &
  • 1 ea Egg

Directions
  • Step #1 This must be baked high in the oven.
  • Step #2 Adjust oven rack to 1/3 of way down & preheat your trusty oven to 375F.
  • Step #3 You will need shallow 2 qt casserole, butter it & set aside.
  • Step #4 Blanche peaches in boiling water (15 seconds if ripe)longer if not quite ripe.
  • Step #5 Peaches are done if you can push your thumb across the surface & skin wrinkles.
  • Step #6 place this in bowl of ice water, then peel with fingers.
  • Step #7 Return partially peeled peaches to boiling water if necessary.
  • Step #8 slice into wedges.
  • Step #9 Wash & drain berries & set aside.
  • Step #10 Place peaches in casserole, cover with berries.
  • Step #11 Sprinkle top with 2 Tbsp sugar (reserve the remaining 3/4 c & 1 Tbsp).
  • Step #12 In mixing bowl, sift together flour, 3/4 c sugar, baking powder and salt.
  • Step #13 Add unbeaten egg.
  • Step #14 Beat with fork, then switch to pastry mixer.
  • Step #15 (You may use food processor/blender).
  • Step #16 Mix until well mixd (all dry ingredients incorporated & then do not mix any more).
  • Step #17 With large spoon, Sprinkle top topping evenly over berries, should be a thin, uneven layer (not too thick in any one place).
  • Step #18 Drizzle melted butter over topiing.
  • Step #19 Mix the cinnamon with the remaining 1 Tbsp sugar and Sprinkle top it over the top.
  • Step #20 Bake uncovered for 15 mins.
  • Step #21 Then increase the temperature to 400F & bake 12-15 mins more until topping is lightly browned.
  • Step #22 May be prepared ahead of time, put in the fridge it and let it stand at about room temp for about half an hr & bake while eating dinner.
