Peach & Champagne Special Recipe

Ingredients
  • 4 tb Melted
  • 1 c All purpose flour
  • 4 tb Chilled butter -- cut into
  • Cut into thick slices
  • Butter to grease dish
  • tbsp
  • 2 tb Melted butter & sugar
  • And
  • 1/3 c Light cream
  • Pieces
  • 1/4 ts Salt
  • 2 c Blueberries
  • 1 tb Cornstarch
  • 5 c Peaches -- peeled, pitted
  • Optional
  • 2 tb Orange liqueur
  • Whipped cream or ice cream
  • For biscuit dough:
  • 1 1/2 ts Baking powder
  • 2 tb Sugar
  • 1/4 c Sugar

Directions
  • Step #1 For the filling mix sugar with cornstarch & toss that with peaches & blueberries.
  • Step #2 Transfer them to the bottom of a lightly buttered shallow baking dish (9 or 10-inch round pyrex pie plate or 8-inch square one.
  • Step #3 ) Preheat the oven to 425F degrees.
  • Step #4 For the dough, in a food processor/blender mix the flour, baking powder & salt; cut in chilled butter & process with cream to make a dough.
  • Step #5 Roll out to about 1/2-inch thick into a shape to fit your baking pan.
  • Step #6 Or cut into biscuits & set biscuits, touching each other over fruit.
  • Step #7 Drizzle biscuits with melted butter & sugar & bake for 40 mins or until biscuits are golden & fruit underneath bubbling.
  • Step #8 Serve hot, warm or at about room temp with cream or ice cream.
  • Step #9 Yield: 6 to 8 servings.
