Chicken Melt Recipe

Ingredients
  • 4 skinless, boneless chicken breasts
  • 1 tbsp butter
  • 1 tsp garlic powder
  • 1 tsp dried rosemary
  • 1/2 c red wine
  • 4 slices Swiss cheese
  • 4 English muffins, split & toasted
  • 1/4 tsp dried thyme
  • 1 onion, sliced into thin rings

Directions
  • Step #1 Preheat the grill for high heat.
  • Step #2 Melt the butter in a skillet over med-heat/flame.
  • Step #3 Place the onion slices in the skillet, sprinkle with garlic powder, & saute until onions are translucent.
  • Step #4 Remove from heat, & set aside.
  • Step #5 Lightly oil the grill grate.
  • Step #6 Place the chicken breast halves on the grill, rosemary, & sprinkle with wine, & thyme.
  • Step #7 Cook for about 8 mins.
  • Step #8 Turn, & continue cooking 8 mins, or until juices run clear.
  • Step #9 Place a slice of cheese on each breast half, & top this with onions.
  • Step #10 Cook until cheese starts to melt.
  • Step #11 Serve on toasted English muffins.
