Peach Fruitcake Recipe

Ingredients
  • 1 1/2 lb Fresh peaches, peeled and quartered
  • 1/2 c Sugar
  • 1 c Low-fat plain yogurt
  • 1/2 ts Vanilla extract
  • 1/8 ts Ground nutmeg
  • 1/2 c Skim milk
  • 1 ts Unflavored gelatin
  • 2 tb Light-colored corn syrup

Directions
  • Step #1 Peach Frozen Yogurt mix first 3 ingredients in a saucepan.
  • Step #2 stir in the milk; let this stand 1 min.
  • Step #3 Place over low heat/flame; cook 5 mins or until gelatin disolves, stirring constantly.
  • Step #4 remove this from heat; stir in the syrup.
  • Step #5 Let cool.
  • Step #6 In food processor/blender add peaches & process until smooth; scraping the sides of the processor bowl every once in awhile.
  • Step #7 mix peach puree, yogurt, gelatin mixture, & vanilla in a large bowl; stir well.
  • Step #8 Cover & chill 8 hrs.
  • Step #9 Pour mixture into a freezer can of a 1-quart hand-turned or 1/2-gallon electric freezer.
  • Step #10 Freeze according to manufacturer's instructions.
  • Step #11 Allow to ripen 1 hr in freezer can.
  • Step #12 Yield: 10 servings (about 93 calories per 1/2 c serving).
