Ingredients
  • 1 Green pepper, sliced
  • 3 Peaches, sliced
  • 2 Cloves garlic, minced
  • 1 Onion, sliced
  • 1 tb Tomato paste
  • 1/4 lb Ham, sliced
  • Salt & Pepper to taste
  • 2 Tomatoes, sliced
  • 3 c Cooked rice
  • 1/4 lb Spicy or smoked sausage, sliced
  • 2 tb Oil
  • 1 ts Thyme
  • 1/4 lb Shrimp, deveined
  • 1 c Chicken broth

Directions

  • Step #2 They're from the San Francisco paper so I won't even begin to vouch for their authenticity, but a couple of them are so complex that they just about have to be real.

  • Step #5 Saute green pepper, tomatoes, onion, garlic thyme, ham & sausage in oil for about 5 mins.
  • Step #6 Add tomato paste & chicken broth; simmer for 5 mins.
  • Step #7 Add peaches & shrimp; cover & let simmer for 5 mins, until shrimp turn pink.
  • Step #8 Add salt & pepper to taste.
  • Step #9 Serve over hot rice.
  • Step #10 Makes 4 servings.
