Ingredients
  • 3/4 ts Salt
  • 2 tb Sour cream
  • 4 tb Mayonnaise
  • 2 x Med peaches, ripe
  • 1 ts Brown sugar
  • 2 ts Lemon juice
  • 1/4 ts Pepper
  • 3 x Chicken breasts
  • 1/2 c Pecans

Directions
  • Step #1 Place chicken in a saucepan, breast side down, in 1-1/2 in of water.
  • Step #2 Cover.
  • Step #3 Simmer for 20 mins until chicken is fork-tender.
  • Step #4 Cool.
  • Step #5 Cut into bite-size pieces.
  • Step #6 During this time, toast pecans at 350 for 10 mins.
  • Step #7 Remove.
  • Step #8 Coarsely break up.
  • Step #9 Pare peaches, if desired.
  • Step #10 Cut into 3/4in pieces.
  • Step #11 In a small bowl, sour cream, mix the mayonnaise, salt, lemon juice, pepper & brown sugar.
  • Step #12 Toss carefully with the chicken, pecans & peaches.
  • Step #13 Serve on a green leaf lettuce.
