Peanut Butter Fudge Recipe

Ingredients
  • 2 tb Creamy peanut butter
  • 2 tb Honey
  • 1/2 c Vanilla low-fat yogurt
  • 1 sm Banana; peeled & sliced
  • 1 tb Lemon juice

Directions
  • Step #1 Recipe by: Cooking Light Cookbook 1993; Oxmoor House.
  • Step #2 mix banana & lemon juice in container of an electric mixer; top this with cover, & process until smooth.
  • Step #3 Add honey & peanut butter; procrss until smooth.
  • Step #4 Add honey & peanut butter; process until mixed.
  • Step #5 Transfer to a small bowl; stir in the yogurt.
  • Step #6 Cover & chill thoroughly.
  • Step #7 Serve with fresh fruit salad.
  • Step #8 Yield: 1 c (33 calories per tbsp).
