Peanut Butter-orange Sandwich Filling Recipe

Ingredients
  • 1 ts Vanilla extract
  • 1 c All-purpose flour
  • 1/2 ts Baking powder
  • 2 tb Unsalted butter; softened
  • 2 tb Milk
  • 1 lg Egg; beaten
  • 1 1/4 c Old-fashioned oats
  • 3/4 c Pitted dates; sliced
  • 1/2 c Crunchy peasnut butter
  • 1/4 c Packed light-brown sugar
  • 1/2 ts Salt

Directions
  • Step #1 Prehaet oven to 350 degrees F.
  • Step #2 Spread the oats on a baking sheet, and toast for 5 mins, stirring once.
  • Step #3 Let cool.
  • Step #4 In a mixing bowl, stir together the butter & peasnut butter, stir in the the brown sugar.
  • Step #5 Stir int he egg, then the milk & vanilla.
  • Step #6 stir in the the dates, then the oats.
  • Step #7 Stir the flour, baking soda & salt together, then add to the peanut butter mixture, stirring just to mix.
  • Step #8 Press the dough into ungreased minature muffin tins filling them about 3/4 full.
  • Step #9 Bake until lightly browned, about 20 mins.
  • Step #10 Turn out of the pans, and let cool.
  • Step #11 store this in self-sealing lastic bags.
  • Step #12 Nutritional info per cookie: 80 cal; 3g fat, 2g pro, 11 g carb.
