Ingredients
  • 3 Boned chicken breasts
  • 1/2 c Celery chunks
  • 2 tb Roasted peanuts
  • 1/2 c Chicken broth
  • 3 tb Water
  • 1/2 c Onion chunks
  • 2 tb cornstarch
  • 2 tb Soy sauce
  • 1 Egg white
  • 2 c Corn oil

Directions
  • Step #1 Cut chicken in 3/4 inch chunks.
  • Step #2 Mix 1 tbs.
  • Step #3 cornstarch & egg white with chicken.
  • Step #4 Preheat wok.
  • Step #5 Add oil & heat to 250 F.
  • Step #6 Put in coated chicken.
  • Step #7 stir this to separate chicken chunks.
  • Step #8 Cook 3 mins.
  • Step #9 Drain chicken.
  • Step #10 Pour off oil.
  • Step #11 Stir fry onions in greased wok 1 min.
  • Step #12 Pour in soy sauce.
  • Step #13 Stir.
  • Step #14 Now add celery, chicken & broth.
  • Step #15 Boil.
  • Step #16 Mix remaining tbs.
  • Step #17 of cornstarch with water.
  • Step #18 stir in theto broth mixture until thickened.
  • Step #19 Add peanuts & serve at once.
