Chicken & Yellow Rice Recipe

Ingredients
  • 1 Green pepper; sliced
  • 1 Onion; halved, sliced thinly
  • 1 ts Paprika
  • 2 tb Olive oil
  • 2 ts Salt
  • 1 cn Pimientos; small, sliced
  • 4 oz Green peas; small
  • 1 Chicken; cut up
  • 2 Garlic cloves; minced
  • 2 c Rice; raw
  • 4 c Water
  • 1 pn Saffron
  • 3 Bay leaves
  • 1/2 ts Cornstarch
  • 1 cn Tomatoes

Directions
  • Step #1 Use chicken pieces as desired.
  • Step #2 Fry chicken in olive oil with onions & garlic.
  • Step #3 When browned on both sides, add tomatoes & water.
  • Step #4 Boil for 5 mins.
  • Step #5 Add bay leaf, paprika, green pepper, saffron, salt, & cornstarch.
  • Step #6 Cook over medium-low heat for about 15 mins.
  • Step #7 Add rice & cook for about 25 more mins.
  • Step #8 If rice becomes dry, add more water as needed.
  • Step #9 Add peas & pimientos & cook for 10 more mins.
