Chocolate Zucchini Bread Recipe

Ingredients
  • 1/2 c baking cocoa
  • 1 1/2 tsps almond extract
  • 4 eggs
  • 1 1/2 tsps vanilla extract
  • 3 c sugar
  • 1/2 c raisins
  • 2 tbsps butter or margarine, melted
  • 3 c all-purpose flour
  • 1 1/2 tsps baking soda
  • 1 1/2 c vegetable oil
  • 1 1/2 tsps baking powder
  • 1 c sliced pecans
  • 1 tsp salt
  • 3 c grated zucchini
  • 1/4 tsp ground cinnamon

Directions
  • Step #1 In a large bowl, mix the first seven ingredients.
  • Step #2 Combine the eggs, oil, butter & extracts; mix well.
  • Step #3 Stir into dry ingredients just until moistened.
  • Step #4 Fold in zucchini, pecans & raisins.
  • Step #5 Pour into three greased & floured 8-in.
  • Step #6 x 4-in.
  • Step #7 x 2-in.
  • Step #8 loaf pans.
  • Step #9 Bake at 350 degrees F for 55-60 mins or until a toothpick inserted near the center comes out clean.
  • Step #10 Cool for 10 mins; remove this from the pans to wire racks.
