D'amaretti Biscotti Recipe

Ingredients
  • 1 tsp almond extract
  • 3 1/4 c all-purpose flour
  • 3 eggs
  • 2 tsps lemon zest
  • 1 egg white
  • 2 1/2 tsps baking powder
  • 1/2 c butter, softened
  • 1 c white sugar
  • 1/2 c toasted almonds, finely sliced

Directions
  • Step #1 Preheat oven to 375 degrees F (190 degrees C).
  • Step #2 Lightly grease baking sheet.
  • Step #3 Combine flour & baking powder; set aside.
  • Step #4 In a large bowl, cream together butter & sugar until light & fluffy.
  • Step #5 Beat in the eggs one at a time, then stir in the the lemon zest & almond extract.
  • Step #6 Stir in the flour mixture until smooth, then stir in the the sliced almonds.
  • Step #7 Divide dough in two.
  • Step #8 Shape each portion into a loaf about 12 inches long & 2 inches wide.
  • Step #9 Place loaves onto the cookie sheet about 4 inches apart, & flatten slightly.
  • Step #10 Beat egg white until foamy, & brush over tops of loaves.
  • Step #11 Bake 20 to 25 mins, or until light brown.
  • Step #12 Cool on baking sheet for about an hr.
  • Step #13 Preheat oven to 325F degrees F (165 degrees C).
  • Step #14 Cut baked loaves diagonally into 1/2 inch thick slices.
  • Step #15 Lay slices cut side down on the baking sheet.
  • Step #16 Bake 10 mins, or until crisp.
  • Step #17 Cool on wire rack.
  • Step #18 Make several days before serving.
  • Step #19 Store in a paper bag to soften slightly.
  • Step #20 For longer storage place this in a sealed container.
