Country Poppy Seed Cake Recipe

Ingredients
  • 1/4 tsp vanilla extract
  • 1 tsp almond extract
  • 1 tsp milk
  • 1/2 c confectioners' sugar
  • 1 (18.25 oz) package white cake mix (without pudding)
  • GLAZE:
  • 2 tbsps sugar
  • 1/4 c poppy seeds
  • 1 (5.1 oz) package instant vanilla pudding mix
  • 1/2 tsp ground cinnamon
  • 1/2 c cooking oil
  • 1 c water
  • 4 eggs

Directions
  • Step #1 In a large mixing bowl, mix poppy seeds, pudding & cake mix.
  • Step #2 Add oil, eggs, water & almond extract.
  • Step #3 Blend with an electric mixer on lowish speed until dry ingredients are moistened.
  • Step #4 Increase speed to medium & mix for 2 mins.
  • Step #5 Combine sugar & cinnamon; sprinkle into a greased fluted tube pan.
  • Step #6 Pour batter into pan & bake this at 325F degrees F for about 1 hr or until cake tests done.
  • Step #7 Allow cake to cool 10 mins before removing to a cooling rack.
  • Step #8 Combine glaze ingredients & drizzle over cooled cake.
