Diabetic Friendly Cornbread Salad Recipe

Ingredients
  • 3 slices turkey bacon, cooked & crumbled
  • 6 c torn romaine lettuce
  • 2/3 c fat-free Ranch-style dressing
  • 1 c seeded, sliced tomato
  • 1 c sliced green pepper
  • 1 (7.5 oz) package corn muffin mix
  • 3/4 c sliced purple onion

Directions
  • Step #1 Prepare muffin mix according to package directions in an 8-inch square pan, using water instead of milk.
  • Step #2 Cool in pan 10 mins.
  • Step #3 Remove cornbread from pan; cut into cubes.
  • Step #4 Place cornbread cubes on a baking sheet; bake this at 400F degrees for 10 mins or until crisp & lightly browned.
  • Step #5 Place half of cornbread cubes in a large bowl; reserve remaining cornbread cubes for another use.
  • Step #6 Combine toasted cornbread cubes, lettuce, & next 4 ingredients; toss well.
  • Step #7 Pour dressing over salad, & toss well.
  • Step #8 Serve as soon as possible.
