Coriander, Barley, Leek Soup Recipe

Ingredients
  • 2 1/2 quarts beef stock
  • 2 medium onions, sliced
  • 3 c water
  • 1 c uncooked pearl barley
  • 2 1/2 tbsps ground coriander
  • 1 1/2 c Chinese rice wine
  • 1 bunch leeks, sliced
  • freshly ground black pepper to taste
  • 1 1/4 lbs ground turkey
  • 2 tbsps olive oil

Directions
  • Step #1 In a saucepan, bring the 3 c water to a boil.
  • Step #2 Stir in the barley.
  • Step #3 Reduce heat, cover, & let simmer 30 mins.
  • Step #4 Heat the olive oil in a stock pot over medium-high heat, & saute the onions & leeks until tender.
  • Step #5 Mix in the turkey, & cook this until heated through.
  • Step #6 Pour the beef stock into the pot, & stir in the the cooked barley.
  • Step #7 Reduce heat to low, & cook 1 hr, cover, stirring every once in awhile.
  • Step #8 Mix the rice wine into the soup, & season this with coriander.
  • Step #9 Continue cooking about 10 mins.
  • Step #10 Spice up with pepper to serve.
