Cream Of Fresh Asparagus Soupi Recipe

Ingredients
  • 1/2 c sliced onion
  • 1 tsp fresh lemon juice
  • 1 c milk
  • 2 tbsps all-purpose flour
  • 1/2 c sour cream
  • 1 pinch ground black pepper
  • 2 tbsps butter
  • 1 tsp salt
  • 1 lb fresh asparagus, trimmed & cut into 1 inch pieces
  • 1 (14.5 oz) can chicken broth

Directions
  • Step #1 In a large saucepan, sliced onion, mix asparagus, & 1/2 c chicken broth.
  • Step #2 Cover, & bring to a boil over high heat.
  • Step #3 Reduce heat, & let simmer uncovered until asparagus is tender, about 12 mins.
  • Step #4 Process the mixture in a mixer to puree the vegetables.
  • Step #5 Set aside.
  • Step #6 In the same saucepan, melt the butter over medium-low heat.
  • Step #7 Stir in the flour, salt, & pepper.
  • Step #8 Cook, stirring constantly for 2 mins.
  • Step #9 Whisk in the remaining chicken broth, & increase the heat to medium.
  • Step #10 Cook, stirring constantly until the mixture boils.
  • Step #11 Stir in the asparagus puree & the milk.
  • Step #12 Put the sour cream in a small bowl, & stir in the a ladleful of the hot soup.
  • Step #13 Add the sour cream mixture & the lemon juice to the soup.
  • Step #14 Stir while heating the soup to serving temperature, but don't allow it to boil.
  • Step #15 Serve as soon as possible.
