Danish Potato Soup Recipe

Ingredients
  • 2 potatoes, peeled & sliced
  • 3 stalks celery, sliced
  • 1/4 c minced fresh parsley
  • 6 green onions, sliced
  • 3 tbsps all-purpose flour
  • 1 ham bone
  • 1 c light cream
  • 2 carrots, sliced
  • ground nutmeg
  • water
  • 2 c sliced cabbage

Directions
  • Step #1 In a soup kettle, bring ham bone & 2 quarts water to a boil.
  • Step #2 Reduce heat & let simmer 1 hr or until meat pulls away from the bone.
  • Step #3 Remove ham bone.
  • Step #4 When cool enough to handle, trim any meat & dice.
  • Step #5 Discard bone.
  • Step #6 Return ham to kettle along with potatoes, parsley, onions, celery, cabbage & carrots; cook 40 mins.
  • Step #7 Stir together flour & 1/4 c cold water.
  • Step #8 Slowly pour this into the soup, stirring constantly.
  • Step #9 Bring soup to a boil; cook 2 mins.
  • Step #10 Reduce heat; stir in the cream.
  • Step #11 Remove from the heat.
  • Step #12 Sprinkle top a dash of nutmeg on each bowlful just before serving.
