Ingredients
3/4 c dry bread crumbs
1 tsp dried dill weed
2 lbs skinless, boneless chicken breast halves
2 c vegetable oil for frying
1/4 tsp ground black pepper
3 tbsps water
1 tsp garlic powder
1/4 c sliced fresh parsley
3/4 c all-purpose flour
2 eggs
1/2 lemon, sliced
1/3 c butter
1/2 tsp garlic powder
1/2 tsp ground black pepper
Directions
Step #1 Combine 1/3 c butter, 1/2 tsp pepper & 1 tsp garlic powder.
Step #2 On a 6x6 inch piece of aluminum foil, spread mixture to about 2x3 inches.
Step #3 Place this mixture in the coldest section of your freezer & freeze until firm.
Step #4 This can be done ahead of time.
Step #5 Remove all fat from the chicken breast.
Step #6 If using whole chicken breasts, cut them in half.
Step #7 Place each chicken breast half between 2 pieces of waxed paper & using a mallet, lb carefully to about 1/4 inch thickness or less.
Step #8 When butter mixture is firm, remove this from freezer & cut into 6 equal pieces.
Step #9 Place one piece of butter on each chicken breast.
Step #10 Fold in edges of chicken & then roll to encase the butter completely.
Step #11 Secure the chicken roll with small skewers or toothpicks.
Step #12 In a mixing bowl, beat eggs with water until fluffy.
Step #13 In a separate bowl, 1/2 tsp garlic powder, mix together 1/4 tsp black pepper, dill weed & flour.
Step #14 Coat the chicken well with the seasoned flour.
Step #15 Dip the floured chicken in the egg mixture & then roll in the bread crumbs.
Step #16 Place coated chicken on a shallow tray & chill in refrigerator for 30 mins.
Step #17 In a medium size deep frying pan, heat vegetable oil to medium-high.
Step #18 Fry chicken for about 5 mins then turn over & fry for 5 mins longer or until the chicken is golden brown.
Step #19 To test for doneness, cut into one of the rolled chicken breasts to make sure it doesn't have a pink interior.
Step #20 Serve as soon as possible, garnished with a sliced lemon twist & a sprinkling or parsley.
