Ingredients
3 c chocolate cookie crumbs
1 c white sugar
1/2 c finely sliced almonds
2 (8 oz) packages cream cheese, softened
3 (1 oz) squares bittersweet chocolate
1 tsp almond extract
1 (16 oz) container sour cream, room temperature
1/2 c butter, melted
1/4 c white sugar
3 eggs
Directions
Step #1 Preheat oven to 350 degrees F (175 degrees C).
Step #2 In a medium bowl, mix cookie crumbs, almonds, 1/4 c sugar & melted butter.
Step #3 Mix well.
Step #4 Press into the bottom & halfway up the sides of a 10 inch springform pan.
Step #5 In the top of a double boiler, stirring every once in awhile, heat chocolate, until chocolate is melted & smooth.
Step #6 Remove from heat & allow this to cool to lukewarm.
Step #7 In a large bowl, beat the cream cheese & 1 c sugar until smooth.
Step #8 Beat in the eggs one at a time.
Step #9 Fold in the almond extract & sour cream.
Step #10 Pour 1 1/2 c of the filling into a smaller bowl.
Step #11 Stir the melted chocolate into the smaller bowl, then fold loosely back into plain filling.
Step #12 Pour into crust.
Step #13 With the tip of a knife, swirl the filling to create a marbled effect.
Step #14 Bake in the preheated oven for 40 mins.
Step #15 Turn off oven & let cake cool in oven for 1 hr, with the door closed.
Step #16 Cool at about room temp, then put in the fridge overnight.
