Coconut Pecan Cake Recipe

Ingredients
  • 2 c shredded coconut
  • 1/2 c vegetable oil
  • 1 (8 oz) package cream cheese
  • 1 1/4 c water
  • 2 c shredded coconut
  • 3 1/2 c confectioners' sugar
  • 4 eggs
  • 1/2 tsp vanilla extract
  • 1 (18.25 oz) package moist white cake mix
  • 1 c sliced pecans
  • 2 tsps milk
  • 4 tbsps butter

Directions
  • Step #1 Preheat oven to 350 degrees F (175 degrees).
  • Step #2 Grease & flour two 8 inch round pans or one 9 x 13 inch pan.
  • Step #3 In a large bowl, mix cake mix with the water, eggs, & oil.
  • Step #4 Beat with an electric mixer at medium speed for 4 mins.
  • Step #5 Stir in 2 c coconut & nuts.
  • Step #6 Pour into prepared pans.
  • Step #7 Bake for 35 mins, or until done.
  • Step #8 Cool completely.
  • Step #9 Melt 2 tbsps butter or margarine in a skillet.
  • Step #10 Add 2 c coconut, & stir constantly over low heat/flame until golden brown.
  • Step #11 Spread toasted coconut on absorbent paper towel to cool.
  • Step #12 Cream 2 tbsps butter or margarine with softened cream cheese.
  • Step #13 Add milk & sugar alternately, beating well.
  • Step #14 Add vanilla, & stir in the 1 3/4 c of the toasted coconut.
  • Step #15 Ice the cake, & sprinkle with remaining coconut.
