Creamy Sweet Potato Soup Recipe

Ingredients
  • 8 c water
  • 1/8 tsp freshly ground black pepper
  • 2 tbsps half-and-half
  • 2 tsps salt
  • 1/3 c butter
  • 1/2 c tomato sauce
  • 1 pinch dried thyme
  • 4 large sweet potatoes
  • 1 c cashew halves

Directions
  • Step #1 Preheat oven to 375 degrees F (190 degrees C).
  • Step #2 Bake sweet potatoes until soft, about 45 mins.
  • Step #3 Remove potatoes, & set aside until cool enough to handle.
  • Step #4 Then peel, & place this in a large bowl.
  • Step #5 With a large fork or potato masher, mash potatoes for 15 to 20 seconds (they do not need to be mashed smooth).
  • Step #6 Spoon the potatoes into a large saucepan over medium-high heat.
  • Step #7 Stir in butter, water, tomato sauce, & half-and-half.
  • Step #8 Spice up with salt, pepper, & thyme.
  • Step #9 Stir in cashews, & mix well.
  • Step #10 Bring to a boil, reduce heat to medium low, & let simmer until cashews are soft, about 50 to 60 mins.
