Ingredients
4 egg yolks
2 c white sugar
1 c flaked coconut
4 egg whites
1 c buttermilk
1 c sliced pecans
1 c butter
4 (1 oz) squares white chocolate, sliced
1 tsp baking powder
2 1/2 c sifted cake flour
1/2 tsp salt
1 tsp vanilla extract
Directions
Step #1 Preheat oven to 350 degrees F (175 degrees C).
Step #2 Grease & flour 3 (9 inch) pans.
Step #3 Sift together the flour, baking powder & salt.
Step #4 Set aside.
Step #5 In a large bowl, cream together the butter & sugar until light & fluffy.
Step #6 Beat in the yolks one at a time, then stir in the the melted chocolate & vanilla.
Step #7 Beat in the flour mixture alternately with the buttermilk.
Step #8 Stir in the nuts & coconut.
Step #9 In a large glass or metal mixing bowl, beat egg whites until stiff peaks form.
Step #10 Fold 1/3 of the whites into the batter, then quickly fold in remaining whites until no streaks remain.
Step #11 Divide batter into prepared pans.
Step #12 Bake in the preheated oven for 40 to 45 mins, or until a toothpick inserted into the center of the cake comes out clean.
Step #13 Allow to cool.
