Clara's White German Chocolate Cake Recipe

Ingredients
  • 4 egg yolks
  • 2 c white sugar
  • 1 c flaked coconut
  • 4 egg whites
  • 1 c buttermilk
  • 1 c sliced pecans
  • 1 c butter
  • 4 (1 oz) squares white chocolate, sliced
  • 1 tsp baking powder
  • 2 1/2 c sifted cake flour
  • 1/2 tsp salt
  • 1 tsp vanilla extract

Directions
  • Step #1 Preheat oven to 350 degrees F (175 degrees C).
  • Step #2 Grease & flour 3 (9 inch) pans.
  • Step #3 Sift together the flour, baking powder & salt.
  • Step #4 Set aside.
  • Step #5 In a large bowl, cream together the butter & sugar until light & fluffy.
  • Step #6 Beat in the yolks one at a time, then stir in the the melted chocolate & vanilla.
  • Step #7 Beat in the flour mixture alternately with the buttermilk.
  • Step #8 Stir in the nuts & coconut.
  • Step #9 In a large glass or metal mixing bowl, beat egg whites until stiff peaks form.
  • Step #10 Fold 1/3 of the whites into the batter, then quickly fold in remaining whites until no streaks remain.
  • Step #11 Divide batter into prepared pans.
  • Step #12 Bake in the preheated oven for 40 to 45 mins, or until a toothpick inserted into the center of the cake comes out clean.
  • Step #13 Allow to cool.
