Step #1 In a mixing bowl, cream butter & sugar.
Step #2 Beat in the egg & extracts.
Step #3 Combine the dry ingredients; slowly add to the creamed mixture.
Step #4 Using a cookie press fitted with the disk of your choice, press dough 2 in.
Step #5 apart onto ungreased baking sheets.
Step #6 Bake at 350 degrees F for 10-12 mins or until set (do not brown).
Step #7 Remove to wire racks to cool.
Step #8 Melt the chocolate; spread over the bottom of half of the cookies; top this with remaining cookies.
