Crab Stuffed Chicken Breasts Recipe

Ingredients
  • 1/2 tsp salt
  • 1/3 c crushed saltine crackers
  • 1 pinch ground black pepper
  • 4 tbsps butter, divided
  • 1/2 c milk
  • 1/4 c sliced onion
  • 1 c shredded Swiss cheese
  • 4 skinless, boneless chicken breast halves
  • 1 c chicken broth
  • 1/2 tsp paprika
  • 1 (6 oz) can crabmeat - drained, flaked & cartilage removed
  • 1 (4.5 oz) can sliced mushrooms, drained
  • 1/4 c all-purpose flour
  • 2 tbsps minced fresh parsley

Directions
  • Step #1 To Make White Sauce: Melt 3 tbsps of the butter in a medium saucepan.
  • Step #2 Stir in flour until smooth, then slowly stir in the broth & milk.
  • Step #3 Bring all to a boil; boil, stirring, for about 2 mins.
  • Step #4 Remove from heat & set aside.
  • Step #5 In a large skillet melt remaining 1 tbsp butter & saute onion over med-heat/flame until tender.
  • Step #6 Add crab, cracker crumbs, salt, parsley, mushrooms, pepper & 2 tbsps of the prepared white sauce.
  • Step #7 Heat through.
  • Step #8 Preheat oven to 350 degrees F (175 degrees C).
  • Step #9 Pound chicken breasts to 1/4 inch thickness.
  • Step #10 Spoon about 1/4 of the crab mixture onto the edge of each chicken breast; roll up & secure with toothpicks.
  • Step #11 Place chicken rolls in a lightly greased 9x13 inch baking dish, then top this with remaining white sauce.
  • Step #12 Cover dish & bake this at 350 degrees F (175 degrees C) for 30 mins or until chicken juices run clear.
  • Step #13 Sprinkle top with cheese & paprika & bake, uncovered, for another 5 mins or until cheese is melted & bubbly.
  • Step #14 Remove toothpicks & serve.
