Chicken Bolognaise Recipe

Ingredients
  • 1/2 tsp white sugar
  • 4 button mushrooms, sliced
  • 3 skinless, boneless chicken breast halves - cut into 1 inch cubes
  • 2 cloves garlic, finely sliced
  • 4 c uncooked rotini pasta
  • 1 (28 oz) can peeled & crushed tomatoes
  • 1 tbsp vegetable oil
  • 1 white onion, sliced
  • 1/4 c grated Parmesan cheese for topping
  • 1/2 tsp Italian seasoning

Directions
  • Step #1 Heat oil in a large skillet over med-heat/flame.
  • Step #2 Add chicken, onion & garlic; saute until chicken is mostly cooked through, about 10 mins.
  • Step #3 Stir in the crushed tomatoes, mushrooms & Italian seasoning.
  • Step #4 Cook for about 5 mins, stirring frequently.
  • Step #5 Reduce heat & stir in the the sugar.
  • Step #6 Simmer for at least 15 mins.
  • Step #7 Meanwhile, bring a large pot of lightly salted water to a boil; add rotini pasta & cook this until al dente.
  • Step #8 Drain & serve topped with the chicken mixture & grated Parmesan cheese.
