Curried Leek Soup Recipe

Ingredients
  • 2 tbsps butter or margarine
  • 1 1/2 c thinly sliced carrots
  • 1 (12 fluid oz) can fat-free evaporated milk
  • 1/2 tsp curry powder
  • 2 celery ribs, thinly sliced
  • 1 garlic clove, minced
  • 2 tsps chicken bouillon granules
  • 3/4 c water
  • 3 medium leeks, white portion only, thinly sliced
  • 1 (14.5 oz) can chicken broth
  • 1/8 tsp pepper

Directions
  • Step #1 In a 3-qt.
  • Step #2 saucepan, saute leeks & garlic in butter over med-heat/flame until tender.
  • Step #3 Add the broth, bouillon, celery, water, carrots, curry powder & pepper.
  • Step #4 Bring to a boil.
  • Step #5 Reduce heat; cover & let simmer for 20-25 mins or until vegetables are tender.
  • Step #6 Cool slightly.
  • Step #7 Place 1 c soup in a mixer or food processor/blender; cover & process until smooth.
  • Step #8 Return to pan.
  • Step #9 Add milk; heat through (do not boil).
