Ingredients
1 onion, sliced into rings
4 russet potatoes, sliced into 1/4 inch slices
3 tbsps butter
3 tbsps all-purpose flour
salt & pepper to taste
1 1/2 c shredded Cheddar cheese
1/2 tsp salt
2 c milk
Directions
Step #1 Preheat oven to 400F degrees F (200 degrees C).
Step #2 Butter a 1 quart casserole dish.
Step #3 Layer 1/2 of the potatoes into bottom of the prepared casserole dish.
Step #4 Top with the onion slices, & add the remaining potatoes.
Step #5 Spice up with salt & pepper to taste.
Step #6 In a medium-size saucepan, melt butter over med-heat/flame.
Step #7 Mix in the flour & salt, & stir constantly with a whisk for one min.
Step #8 Stir in milk.
Step #9 Cook until mixture has thickened.
Step #10 Stir in cheese all at once, & continue stirring until melted, about 30 to 60 seconds.
Step #11 Pour cheese over the potatoes, & cover the dish with aluminum foil.
Step #12 Bake 1 1/2 hrs in the preheated oven.
