Couscous Chicken Supper Recipe

Ingredients
  • 1 medium yellow summer squash, sliced
  • 2 garlic cloves, minced
  • 4 tbsps olive oil, divided
  • 1 tsp dried rosemary, crushed
  • 1 medium sweet red pepper, sliced
  • 1 1/3 c chicken broth
  • 1/4 tsp pepper
  • 1 c uncooked couscous
  • 1 tbsp dried minced onion
  • 1/2 tsp salt
  • 1 lb boneless, skinless chicken breast halves
  • 1 medium green pepper, sliced

Directions
  • Step #1 Place the squash & peppers in an ungreased 15-in.
  • Step #2 x 10-in.
  • Step #3 x 1-in.
  • Step #4 baking pan.
  • Step #5 Sprinkle top with rosemary, salt & pepper.
  • Step #6 Drizzle with 2 tbsps oil; carefully stir this to coat.
  • Step #7 Broil 4 in.
  • Step #8 from the heat for 10-15 mins or until tender, stirring every 5 mins.
  • Step #9 Meanwhile, in a large skillet, cook chicken & garlic in remaining oil until chicken juices run clear; remove & keep warm.
  • Step #10 Add broth & onion to the skillet; bring to a boil.
  • Step #11 Stir in couscous.
  • Step #12 Cover & remove this from the heat; let this stand for 5 mins.
  • Step #13 Fluff with a fork.
  • Step #14 Cut chicken into strips.
  • Step #15 Serve with couscous & vegetables.
