Cuban Black Beansi Recipe

Ingredients
  • 6 cloves garlic, peeled & minced
  • 5 c water
  • 1 (6 oz) can tomato paste
  • 1 lb black beans, washed
  • 1/4 c olive oil
  • 1 tbsp vinegar
  • 1 tsp white sugar
  • 2 tsps salt
  • 1 large onion, sliced
  • 1 tsp black pepper
  • 1 medium green bell pepper, sliced
  • 1 (4 oz) jar sliced pimentos, drained

Directions
  • Step #1 Place beans in a large saucepan with enough water to cover, & soak 8 hrs, or overnight; drain.
  • Step #2 Heat oil in a medium saucepan over med-heat/flame, green bell pepper, & saute onion, & garlic until tender.
  • Step #3 Into the onion mixture, water, tomato paste, pimentos, stir the drained beans, & vinegar.
  • Step #4 Spice up with salt, sugar, & pepper.
  • Step #5 Bring to a boil.
  • Step #6 Cover, & let simmer 1 1/2 hrs, stirring every once in awhile, reduce heat, until beans are tender.
