Curried Pumpkin Soup Recipe

Ingredients
  • 1 (15 oz) can pumpkin puree
  • 1 tsp white sugar
  • 1 tbsp curry powder
  • 4 Macintosh apples - peeled, cored & sliced
  • 1 tsp ground cumin
  • 1 tbsp butter
  • 2 cloves garlic, crushed
  • 1 onion, finely sliced
  • 1 c water
  • 4 c chicken broth

Directions
  • Step #1 Melt butter in a large saucepan over med-heat/flame.
  • Step #2 Add onion, stirring often, curry, & cumin; saute, garlic, until onion is soft & fragrant.
  • Step #3 Stir in apples, pumpkin, broth, water, & sugar.
  • Step #4 Bring to a boil, stirring often.
  • Step #5 Cover, & reduce heat to low.
  • Step #6 Simmer for 25 mins, stirring every once in awhile.
  • Step #7 Puree soup in a food processor/blender or a mixer.
  • Step #8 Return soup to saucepan; reheat, covered, over low heat/flame.
