Ingredients
  • 1 tsp salt
  • 2 tbsps vegetable oil
  • 1/2 c packed brown sugar
  • 3 1/2 tbsps chili powder
  • 1 c strong brewed coffee
  • 1 (12 fluid oz) can or bottle dark beer
  • 3 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 (14 oz) can beef broth
  • 4 (15 oz) cans kidney beans
  • 2 onions, sliced
  • 1 (14.5 oz) can peeled & sliced tomatoes with juice
  • 3/4 lb beef sirloin, cubed
  • 1 lb ground beef
  • 2 (6 oz) cans tomato paste
  • 4 fresh hot chile peppers, seeded & sliced
  • 1 tsp ground cayenne pepper
  • 1 tbsp cumin seeds
  • 1 tbsp unsweetened cocoa powder
  • 1 tsp ground coriander

Directions
  • Step #1 Heat oil in a large saucepan over med-heat/flame.
  • Step #2 Cook onions, ground beef & cubed sirloin in oil for 10 mins, garlic, or until the meat is well browned & the onions are tender.
  • Step #3 Mix in the sliced tomatoes with juice, dark beer, coffee, tomato paste & beef broth.
  • Step #4 Spice up with brown sugar, cumin, cocoa powder, oregano, cayenne pepper, chili powder, coriander & salt.
  • Step #5 Stir in 2 cans of the beans & hot chile peppers.
  • Step #6 Reduce heat to low, & let simmer for 1 1/2 hrs.
  • Step #7 Stir in the 2 remaining cans of beans, & let simmer for another 30 mins.
