Coconut Curried Tofu With Green Beans And Coconut Rice Recipe

Ingredients
  • 1/2 tsp butter
  • 1/2 c uncooked white rice
  • 1/4 c coconut milk
  • 1 c fresh green beans, rinsed & trimmed
  • 1/2 c coconut milk
  • 3 oz firm tofu, cubed
  • 1/4 tsp curry powder
  • 1/2 c water

Directions
  • Step #1 Pour water, 1/2 c coconut milk, & rice into a small saucepan.
  • Step #2 Bring to a boil over medium-high heat, cover, & let simmer until the rice is tender, then reduce heat to medium-low, about 20 mins.
  • Step #3 Meanwhile, melt the butter in a skillet over medium-high heat.
  • Step #4 Add the tofu & cook this until golden-brown on all sides, about 5 mins.
  • Step #5 When browned, stir in the green beans, curry powder, & 1/4 c of coconut milk.
  • Step #6 Simmer until the green beans are tender, then serve over rice.
